Easy Recipe:  Sweet and Sour Meatballs

Step 1   Add a couple shakes of onion powder to two pounds of ground beef and mix thoroughly. Using a one-inch-diameter cookie scoop, form meatballs and place them on a nonstick skillet, at least a half inch apart. Brown the meatballs on all sides then transfer them to a covered microwave casserole dish.

Step 2   Mix equal parts of ketchup and grape jelly (yes, grape jelly–an old classic) and pour over the meatballs–enough to drown (cover) them. Microwave, covered, for four minutes. Stir the sauce until smooth. Continue to cook, checking every minute until done. Verify by cutting one of the meatballs in half. Serve immediately or keep warm in a crock pot.

  2. I’m going to shock my family and make these sweet and sour meatballs for Christmas. (I rarely cook. I’m more of a baker, or casserole kind of gal.) Thanks for the recipe, Ashley!

    • Hi Jolyse, You’re so welcome. Also, if my guests prefer a sauce that’s less sweet, I thin the ketchup-grape jelly mixture with a healthy splash of tempura sauce and cook it down a bit longer. If I’m out of tempura sauce, then I substitute equal parts of soy sauce and chicken broth. Cheers, Ashley
