Easy Recipe: Breakfast Tacos (makes four tacos)
Step 1 Poke fork holes in a potato and microwave for five minutes. Check with a knife to see if the potato’s done. If not, microwave for another minute or two. Cut the potato into half-inch cubes and place in a deep microwave-safe bowl. Also cook four strips of bacon. The microwave works well here, too. But keep an eye on the bacon the whole time–so it doesn’t burn. Cut the bacon strips into half-inch pieces and add to the potato cubes.
Step 2 Pour Egg Beaters® egg whites over the potato cubes and bacon pieces until the liquid just covers them. Lightly sprinkle salt and pepper over the egg mixture. Microwave for one minute and stir. Microwave for a second minute and stir. Add a really big handful of shredded sharp cheddar on top of the egg mixture and microwave for a third minute, to melt the cheese. Scoop the egg mixture into four six-inch-diameter tortillas and wrap into tacos. If the tortillas are stiff, they can be softened by microwaving for ten to twenty seconds.

I love breakfast tacos, Ashley. Question though: Can I use plain eggs, along with the yolks, instead of the special egg whites?

Sure, Julie, whichever is easier for you. I use the egg-whites-in-a-carton, because there are no egg shells to deal with, and the egg whites are supposed to be a wee bit healthier. Cheers, Ashley
