Question of the Week #40: Culture

How do you autumnize your recipes?

My two cents (but please share yours):

I substitute apple cider for broth in stews and apple vinegar for white-wine vinegar in salad dressings.



  1. It’s green chile season in New Mexico. You can smell the chiles roasting all around. I’ll pick up a bushel to be roasted, then put the roasted chiles in quart sized bags to freeze. Hot green chiles go into everything. OMG the soup I just made: rotisserie chicken, onions, green chiles and a few tomatoes. Oh, and of course garlic
