Easy Recipe: Hot Fill-in-the-Blank Dip for One

My motto used to be “If it didn’t get done in the microwave, it didn’t get done.” I’ve since learned to use my electric oven and its four-burner cooktop. But …

Easy Recipe: Hot Fill-in-the-Blank Dip for One

Step 1   In a microwave-safe bowl, mix the following.

1/2 c  Cooked and chopped Fill-in-the-Blank (= chicken, fish, shellfish, broccoli, artichokes, mushrooms, spinach, etc.)

1T  Mayonnaise

1T Plain, nonfat yogurt

1-2T  Parmesan (or other grated or shredded cheese)

1-2t  Onion powder

Dash salt and pepper

Step 2   Nuke for 30 seconds. Stir. Repeat until dip is nice and toasty warm. Serve with tortilla or pita or veggie chips.

Enjoy.
