Favorite Tip #74: Quick Potatoes

Potatoes are best when roasted for an hour or more in the oven. But to save time, wash and place small potatoes in a ring on a microwave-safe plate. Jab each potato with a fork several times (to avoid explosions) and nuke for 5 minutes. Test with a knife to see if it goes in easily. If it does, the potatoes are done. If not, nuke for another minute and test again. Peeling the potatoes beforehand is optional. Enjoy.

  2. Since the microwave doesn’t brown them, I agree it’s best to put them in the over.

    • You’re right about the browning, David. But the microwave works very well if the potatoes are destined for buttered parsley potatoes, mashed potatoes, potato salad, or such. Cheers, Ashley
