Easy Recipe: No-Cooking Cheese Sauce

Step 1   In a food processor, blend:

  • 1 c cooked cauliflower (thawed frozen cauliflower is fine)
  • 1/2 c roughly chopped raw carrots (for color)
  • 1-3 T seasonings (salt, pepper, herbs, spices, Dijon mustard–play with your favorites)
  • 3-5 oz. shredded cheese (Play mix and match here, too)
  • 2-4 splashes of broth.

Add the broth one splash at a time and blend until the sauce is smooth and creamy.

Step 2   Just pour the cheese sauce over hot pasta, rice, meat, or veggies. The heat from the entrée will warm the sauce. Serve immediately. Serves 2-4, depending on how much you like to drench your entrée in cheesy goodness.
