Superfood of the Week – Cauliflower

What is your favorite recipe that uses this food?

My two cents (but please share yours):

Cauliflower is wonderful cooked and mashed like potatoes. I like to substitute Greek yogurt for the sour cream, but I keep the real butter.

  1. I’ve never mashed them like potatoes; I’ll have to try that. I usually eat them raw, but with a dip.

  3. Never tried mashing. Intriguing. I usually just mix frozen cauliflower, broccoli stems and corn, add butter, and nuke. Good that way. I’d never eat them raw, though.

    • Both raw and cooked are great, David. Cooked cauliflower can also be minced and used as a tasty rice substitute–either plain or with sauce on top. Cheers, Ashley

  4. I only eat cauliflower steamed or raw with dip. My family also enjoys it in vegetarian lasagne.

  5. I keep it simple — steamed with lots of butter. It’s one veggie that not a starch that my husband will eat raw, not cooked, but raw is still good, especially in salad.
