Superfood of the Week – Avocado

What is your favorite recipe that uses this food?

My two cents (but please share yours):

Avocado is most often used in guacamole, but I like to add chunks of it to tortilla soup. When making a big batch of soup, leave out the avocado chunks, tortilla-chip strips, and cheddar cheese so that the soup can keep in the refrigerator for several days. When ready to serve, spoon the soup into individual microwave-safe bowls, add the avocado, strips, and cheese, cover, and nuke for a few minutes until the soup is warm and the cheese has melted.

  2. I only eat avocado plain with mayo or sour cream on the side, along with a quesadilla.

  3. All by themselves with a little salt and pepper, or maybe garlic salt and no pepper. Delicious! Or Balsalmic vinegar is always good by itself.

  4. I LOVE avocado. I could eat it with everything, even by itself. But it’s so expensive, I don’t get it unless it’s on sale.

  5. I can take it or leave it, but my wife, daughter and grandkids crave it. Daughter and grandkids make avocado sandwiches – no meat, just avocados.

    • Avocado sandwiches sound good, David, if one can add lettuce and tomato slices. Also, many folks use mashed avocado as a spread instead of mayonnaise. Cheers, Ashley
