Superfood of the Week – Mushrooms

What is your favorite recipe that uses this food?

My two cents (but please share yours):

I happen to love mushrooms almost as much as chocolate. So they’re a staple. Currently, I’ve been making cheddar cheese, cilantro, and mushroom quesadillas on small corn tortillas, heated in the microwave. Sometimes, I shake in a little cumin and turmeric powder to up the Tex-Mex flavor. Enjoy.

  1. I actually despise raw mushrooms, but love them sauteed and also stuffed with cream cheese, nuts and gorgonzola cheese. Bake for 20-25 minutes at 350. YUM.

    • “YUM” is right, Jenny! Those wonderful ingredients would also work really well wrapped in puff pastry and baked at 400 for about 15-20 min. Cheers, Ashley

  2. Raw, sautéed, whatever . . . Yum! I include them among ingredients in omelets all the time.

  3. Oh yeah, best is fresh, just washed, and raw.

    • Sometimes, I think mushrooms should be their own food group, Riley. Love them–raw, cooked, pickled, you name it. Cheers, Ashley
