Superfood of the Week – Sweet Potatoes

What is your favorite recipe that uses this food?

My two cents (but please share yours):

I like to slice a sweet potato into thin chips, sprinkle with a little olive oil, and bake at 350 degrees for about 15 minutes. Then I turn the chips over, sprinkle with grated parmesan, and bake for about 5 minutes more until golden brown.
