Superfood of the Week – Cilantro

What is your favorite recipe that uses this food?

My two cents (but please share yours):

Fresh cilantro deserves to be upgraded from herb-and-garnish status to healthy salad green. I like to mix it with lettuce, fresh mint, and the usual salad veggies then top with a homemade Asian peanut-butter dressing. A large handful of cilantro also makes a great addition to Tex-Mex tortilla soup or Thai coconut, mushroom, and broth soup. Enjoy.



  1. I LOVE cilantro! I could add the leaves and stems to most everything.
