Superfood of the Week – Artichoke

What is your favorite recipe that uses this food?

My two cents, but please share yours:

In addition to steaming artichokes and serving them with hollandaise sauce, one can also take precooked artichoke hearts–fresh, frozen and thawed, or canned–chop them into bite-size pieces, and sauté them in real butter until golden brown on the edges. Then put the artichoke bits on a microwave-safe plate, sprinkle with a generous amount of parmesan (a snowstorm of parmesan), and nuke until the cheese melts. Serve immediately. A squeeze of fresh lemon juice is also a lovely option.
