Superfood of the Week – Tomatoes

What is your favorite recipe that uses this food?

My two cents, but please share yours:

Tomatoes are such a staple, but we can still play with them. I like to slice off the tops, scoop out the seeds, and fill them with a mixture of cheddar cheese, a dash of cumin powder, 2T of chopped fresh cilantro, a dash of onion powder, a dash of garlic powder, and a splash of fresh lime juice. Chopped celery and carrots and precooked corn can also be added to the mixture if desired.

Place the stuffed tomatoes in a deep microwave-safe dish, and nuke for 2-3 minutes until the cheese is fully melted and bubbly. Serve immediately. Enjoy.


  1. Not a fan of tomatoes…unless they’re in red sauce. 🙂

  2. Salads; soups; I keep extra frozen (cut up) in the freezer to add to canned soups for a quick lunch; sauteed with basil and mushrooms for pasts; great fresh sliced on tuna sandwich. Costco has the Campari tomatoes (not too big, not to small, and what I can’t finish in a week or so goes into the freezer.

    • Never thought of freezing tomatoes before, Kay. But it makes sense, and handy, too. Cheers, Ashley
