Superfood of the Week – Olive Oil

What is your favorite recipe that uses this food?

My two cents, but please share yours:

There are so many uses for olive oil, but here’s my favorite. Take 4T of olive oil, and add it to a sauté pan. Begin heating it on medium high. Add 1c sliced mushrooms, 1/2c each of raw cashews and chopped celery and diced carrots, and 2t each of garlic powder and onion powder. Sauté until the mixture is golden. Add additional olive oil, if the sauce becomes dry.

Next, add in 2c precooked pasta. Stir and coat. Finally, sprinkle in 1T chopped fresh basil and 1/2c grated parmesan. Stir thoroughly and serve. Enjoy.
