Superfood of the Week – Lentils

What is your favorite recipe that uses this food?

My two cents, but please share yours:

Lentil stew is my favorite. Mix 1c lentils with 2c broth (beef or mushroom) in a Dutch oven. Add in 12-16 oz. of diced tomatoes, 1c sliced mushrooms, and 2c precooked and bite-size veggies of choice. Green beans, broccoli florets, and peas are good options, but others like cauliflower work, too. Stir well. Season with a shake or two each of onion powder, garlic powder, and Italian herbs. Taste the liquid to check for seasoning, and add more if needed. Set the pot on a burner, bring to a boil, and drop the temperature to medium-low. Simmer with the cover on most (about 95%) of the way until tender. Check periodically that the stew is moist. If it begins to dry out, add several splashes of water. Enjoy.

  2. Never cooked with them, but I have enjoyed eating lentil soup.

    • This recipe is similar to traditional lentil soup but with less liquid, David. You might like this one. Cheers, Ashley
