Superfood of the Week – Corn

What is your favorite recipe that uses this food?

My two cents, but please share yours:

Buttered corn on the cob is best, but corn in queso is also yummy.

Spoon a can of either cream of chicken or cream of mushroom soup into a microwave safe bowl. Add a can of Rotel tomatoes, a handful each of diced celery, diced carrots, and chopped fresh cilantro. Then add 1-2c precooked (cut off the cob) corn. At this point, add any of your other favorite queso options (chopped mushrooms, ground beef or turkey, black beans, etc.) before the seasonings.

For the seasonings, add 2-3 shakes of cumin powder, 1 shake of turmeric powder, 1 shake of coriander powder, 1 light shake of garlic powder, and 1 shake of onion powder. Stir all thoroughly.

Add in enough shredded cheddar cheese so it becomes the main ingredient. Start with 8 oz. and stir. Add more as needed. Cover, and nuke in the microwave for 5-7 minutes. The queso should be thoroughly melted. Stir again, and serve with your favorite corn chips. Enjoy.
