Foodie Corner – 2016 – Post #4 – Memorial Day

What is the perfect side dish to serve at a Memorial Day weekend picnic?

My two cents, but please share yours:

I’m going with potato salad. Poke 2 baking potatoes with a fork multiple times, place them on a microwave-safe plate and nuke for 5 minutes. They’re done when a clean knife goes in and out easily. If needed, add additional nuking time, 1 minute at a time.

While they’re still warm, mash the potatoes in a bowl, and mix in 3-5T of your preferred mayonnaise. Add a little more, if the mixture is still dry.

Next, add your favorite “fixins.” Mine include 3 chopped bacon slices and 1 chopped hardboiled egg. Or try 1T curry powder for a great alternative. Another wonderful addition is 1T grainy mustard. Or add 2t cumin, 2t ground coriander, 1t garlic powder, and 1t onion powder to the potato salad for a great Tex-Mex flavor. As always, play with this recipe. Make it your own.


  1. You and I are usually more in sync than this. I’d say anything BUT potato salad. French fries, slaw, baked beans – anything but potato salad. Maybe we should stick to politics. We seem to agree there.
