Foodie Corner – 2016 – Post #11 – Base for Cheese Balls and Spreads

What is the base recipe for most cheese balls and spreads?

My two cents, but please share yours:

Ingredients:

  • 8 oz. cream cheese (regular or lowfat)
  • 4 oz. cheese (shredded or grated, one type or a mixture)
  • 1T herbs (optional, one type or a mixture)
  • 2t spices (optional, one type or a mixture)
  • 1-3T well-chopped goodies (optional, dried fruits such as cranberries, nuts, jalapeños, raw or cooked veggies, cooked bacon, etc.)
  • 3T finely chopped goodies for outer coating (herbs, spices, veggies, nuts, dried fruits, crackers, pretzels, potato chips, etc.)

Directions:

  • Soften the cream cheese
  • Except for the coating goodies, mix in the rest of the ingredients thoroughly and form into a tight ball or press the spread into a serving bowl
  • Chill for two hours
  • Roll cheese ball in the finely chopped goodies to fully coat or scatter goodies over spread like a frosting
  • Serve with crackers and enjoy.
