Foodie Corner – 2016 – Post #12 – Tomato Dump Soup

What is tomato dump soup?

My two cents, but please share yours:

Ingredients:

  • 1 can (about 14.5 oz.) diced tomatoes
  • 1 can (about 10.5 oz.) cream of chicken soup
  • 1 can (about 6 oz.) tomato paste
  • Chicken broth – enough to thin soup to desired thickness
  • 2T pesto (from a jar or homemade)
  • 2 splashes dry sherry

Directions:

  • Thoroughly mix all of the above in a microwave-safe bowl. Nuke for 5-7 minutes.
  • Garnish with grated parmesan or shredded mozzarella.
  • Serve and enjoy.
