Foodie Corner – 2017 – Post #6 – Mix-‘n’-Match Citrus-Wine Soup
What is a nice, light soup for warmer weather?
My two cents, but please share yours:
The answer is any version of this mix-‘n’-match soup.
In a deep microwave pot, add in the following.
- 3-4c Broth (choose from chicken, beef, mushroom, tomato, or vegetable)
- 1.5-2c Wine (choose from white, rosé, red, sparkling, or any other alcoholic beverage–but never use cooking wine)
- Citrus juice from 2-4 lemons (or equivalent amount from limes, oranges, or pineapple)
- 2-4t Garlic powder
- 1-2c Precooked shredded meat, beans, fish chunks, or chopped shellfish
- 1-2c Diced precooked vegetables (any assortment you prefer)
- 4T Butter (olive oil or coconut oil–only if you must, butter is much better)
Stir, cover, and nuke for 5-8 minutes. Add salt and pepper to taste and chopped herbs for a garnish. Serve with well-buttered toast or garlic bread for dipping in the soup. As always, be sure to play with this recipe and make it your own. Enjoy.
