Foodie Corner – 2018 – Post #5 – Fusion Tacos

What is the latest way to use up leftovers?

My two cents, but please share yours:

The fancy answer is fusion tacos.

Grab one or more tortillas (6″ or 8″ for a meal, mini tortillas for appetizers), heat them for 10 seconds in the microwave to make them flexible, and start piling in your leftovers, at least two generous spoonfuls. Just about any filling will work. Sometimes I heat up the filling in the microwave, and sometimes I’m too lazy to bother. Here are some of my favorites.

  • Moo Shu chicken
  • Sesame chicken
  • Meatloaf
  • Macaroni and cheese
  • Green bean casserole
  • Turkey and stuffing, garnished with cranberry sauce of course
  • Chili, regular or white-bean style
  • Beef burgundy
  • Italian meatballs
  • Swedish meatballs
  • Chopped-up grilled hamburgers and French fries
  • Japanese sushi
  • Pad Thai
  • Chicken enchiladas
  • Beef stew

Be creative. Any national cuisine will work. Play with your food, especially your sauces and salsas. Melt cheese over top, whenever it goes with your filling. You can also substitute crunchy tacos for the soft tortillas whenever you like. And be sure to have fun. Enjoy.
