Foodie Corner – 2019 – Post #2 – Microwave Lentil Soup

Is there an easy way to make healthy lentil soup?

My two cents, but please share yours:

Yes. Make it in the microwave.

Add 1c dry lentils to a 3 qt microwave dish. Next add 5c broth. Any will do, but I prefer low sodium chicken broth. Nuke for 10 minutes and rest, covered, for 20 minutes.

Next add 1c diced mix of onions, celery, and carrots, 1/2c sliced mushrooms, 1/2c frozen peas, 1 can of diced tomatoes (with juice), and 1 can of chopped artichoke hearts (without juice). Stir.

For the seasonings, add 5 shakes of Italian dried herbs and 2 shakes of each of the following: dried oregano, dried basil, dried parsley, onion powder, garlic powder, black pepper, and dried minced onion.

Finally, stir thoroughly and nuke for 5 minutes. The lentils should be tender. If not, nuke for another 5-10 minutes.

Like all recipes, please play with them and make them your own. Enjoy all weekend by reheating each single-serving bowl in the microwave (about 2 minutes). For extra nutrition, add 1/2c precooked warm rice to each bowl.
