Foodie Corner – 2019 – Post #6 – Taco Leftovers

How do you make restaurant leftovers interesting?

My two cents, but please share yours:

Whether I bring home smoked-salmon sushi or spaghetti and meatballs or steak-and-mushroom pie or beef and broccoli with jasmine rice or gyro meat with tzaziki sauce or the remaining half of a much-too-large bacon cheeseburger, I can always twist these leftovers into an interesting new dish by using them as the filling inside a crispy taco, a soft taco, or a quesadilla.

And these leftovers can be extended into extra meals–love a bargain!

For a crispy or soft taco, just add a butter lettuce leaf to help contain the filling plus any juice it may have, and maybe add a little fresh diced tomato or fresh herbs to brighten the flavors.

For a quesadilla, select a complementary shredded cheese to act as the glue, keeping the goodies inside.

As always, experiment with your food. Play with unexpected combinations. And enjoy.
