Foodie Corner – 2020 – Post #1 – Spring Gazpacho

How easy is spring gazpacho for one?

My two cents, but please share yours:

Very easy!

Rough chop one plum tomato, 1/3 of a red bell pepper, 1 stalk of celery, 5-10 baby carrots, and 1/3 of a cucumber, and place all in a mini food processor. Add 3-5T of Italian, ranch, or Tex-Mex salad dressing.

Blend until either chunky or smooth, depending on your preference. Chill for at least 30 minutes. If the veggies came from the fridge, the soup may already be sufficiently chilled. Garnish with several leaves of your preferred herbs (mint, basil, cilantro). Serve in a bowl, and enjoy.
