Foodie Corner – 2020 – Post #2 – No-Cooking Cheese Sauce

What is no-cooking cheese sauce?

My two cents, but please share yours:

Step 1:  In a food processor, blend:

o  1 c cooked cauliflower (thawed frozen cauliflower is fine)
o  1/2 c roughly chopped raw carrots (for color)
o  1-3 T seasonings (salt, pepper, herbs, spices, Dijon mustard–play with your favorites)
o  3-5 oz. shredded cheese (play mix and match here, too)
o  2-4 splashes of broth (usually chicken or vegetable).

Add the broth one splash at a time and blend until the sauce is smooth and creamy.

Step 2:  Just pour the cheese sauce over hot pasta, rice, meat, or veggies. The heat from the entrée will warm the sauce. Serve immediately. Serves 2-4, depending on how much you like to drench your entrée in cheesy goodness.
