Foodie Corner – 2021 – Post #1 – Microwave Cheese Sauce

How can you make a cheese sauce in the microwave?

My two cents, but please share yours:

  • 2 cans cream of chicken soup
  • 2 handfuls of shredded cheese to start (Cheddar, Swiss, Mozzarella, Monterey Jack, etc.)
  • 1/2c chicken broth (to thin out the sauce a little–should still be fairly thick as the soup will melt during cooking)
  • optional – 1/2c diced extras (ham, chicken, ground beef, veggies, nuts, etc.)
  • optional – 1/4c white wine (if making a Swiss fondue sauce) or Worcestershire sauce (if making Welsh rarebit)
  • optional – 1-2T dried herbs and/or spices (for example, for Tex-Mex queso, use cumin powder, coriander powder, chopped cilantro)

Mix all of the above ingredients. Taste for the right balance of cheese to soup. If necessary, add more shredded cheese to suit your taste. Stir. Nuke all in a covered microwave-safe dish for 3 minutes. Stir, and microwave for another 2-3 minutes until fully melty. Stir. Serve over meat or vegetables or starch.

Play with this recipe, especially with the herbs and spices, and make it your own. Enjoy.
