Do you have a favorite croquette recipe?

My two cents, but please share yours:

I’m beginning the process of developing an easy mix-n-match croquette recipe. Here’s the starting recipe I’ll play with this fall and winter.

Step 1: In a skillet on the stovetop, make a roux by stirring together 5T butter, 1T olive oil, 6T flour, and 1-2t herbs/spices. Stir over medium heat until lightly brown.

Step 2: Slowly whisk in 1c liquid, either milk, broth, or a combination of these two. Stir over medium heat until the sauce thickens and coats the back of a spoon.

Step 3: Remove the sauce from the heat, and thoroughly stir in 4oz of finely chopped precooked meat or cheese or precooked potato or any combination of these three. Return to the heat, and cook for 1-2 minutes.

Step 4: Chill the croquette mixture for 4 hours to firm. Scoop out 1″ balls onto a nonstick sheet pan, and chill them for another hour.

Step 5: Coat the croquette balls in a whisked egg wash, cover the balls in breadcrumbs (which may be seasoned), and fry in olive oil and butter until golden brown. Serve warm, and enjoy.
