Foodie Corner – 2022 – Post #1 – Mix-‘n-Match Casserole
How do you make a mix-‘n-match casserole?
My two cents, but please share yours:
- 1 can cream of chicken soup
- 2c mayonnaise
- 1c shredded cheese (Cheddar, Swiss, Mozzarella, Monterey Jack, etc.)
- 1t onion powder
- 1t garlic powder
- 12-16oz frozen chopped veggies (broccoli, artichoke hearts, spinach, asparagus, etc.)
- 1t each salt and black pepper
- Topping: cracker crumbs mixed with melted butter, enough to cover to desired thickness (can substitute crumbled potato chips)
Preheat the oven to 350 degrees F. Mix all of the above ingredients, except for the cracker crumbs, directly in a standard casserole dish. Spread out the mixture and cover evenly with the topping. Bake at 350 degrees F until lightly brown and bubbly, roughly 30 minutes.
Play with this recipe, especially with the toppings, cheeses, and spices, and make it your own. Enjoy.
