What is your favorite weird but healthy food this summer?
My two cents (but please share yours):
This summer, I’ve been craving quinoa with a drizzle of olive oil and a generous dusting of parmesan. It’s filling the gap left when I cut back on white rice.

I make salsa fresca (sweet onion, tomato, jalapeño, cilantro, lime juice) and chop up a kohlrabi to add. It tastes somewhat like jicama, but I can grow kohlrabi up here in Alaska. Alas, jicama, not so much 😛

Cottage cheese with fruit, but my new find is Kinds bars with almonds and dark chocolate–supposed to be good for you, or so they tell me. 🙂
