Easy Recipe:  Potato Croquettes

Step 1   Peel, chop, and boil four potatoes. While hot, mash and add two shakes of onion powder and one shake of garlic powder. Next, mix in about 1 and 1/2 cups of grated parmesan. Chill for an hour.

Step 2   Mold the potato mixture into one-inch-diameter balls then flatten into thin patties. Dip each patty into beaten egg, coat completely with Italian breadcrumbs, and fry in 2 T olive oil. Drain on paper towels and serve warm with aioli or the dipping sauce of your choice.
